Mango

Tegbi is a small town in the Volta Region of Ghana. I have fond memories of this place... sitting on the beach every morning eating mango's for breakfast whilst listening to the waves crash against the beach, watching the fishermen work, taking their nets out and pulling them in again. Remembering that, this two layer bonbon has a 35% Ivoire white chocolate couverture and is filled with mango gelee, a white chocolate mango ganache, and crispy quinoa.

Mangogelei (mango puree: 90%, zuiker: 10%), pectin (water, citroenzuur, pectin (pectin E440i, tartrate of sodium and potassium E337, dextrose, sodic polyphosphate E452i), suiker, glucosestroop, slagroom (stabilisator: E407), vloeibare omgekeerde suiker, cacaoboter, witte chocolade, minimaal 35% cacaoboter (suiker, cacaoboter, volle-melkpoeder, emulgator (sojalecithine), natuurlijk vanille-extrakt.
