It has been a busy two months since my last post. After a few weeks of physical and mental health issues, I am back to work and things are progressing smoothly. With that in mind, I wanted to fill you in on a few changes that have either been made or are currently in process.
First and foremost: prices. When I first began this adventure, I had some difficulty figuring out the right price for each of my products, but eventually - after some in-depth research and conversations with other chefs and chocolatiers around the world - decided on some prices I thought made sense, but were really far too high, and were then brought down to what they have been for the last year.
As my business has grown, so has my understanding of the ins- and outs of running a business, and all those little things that turn out to be quite huge things if you don't pay close attention to them. I have been able to get a better view of where I am, where I would like to be, and what is required to get there. This last year I have been selling my boxes at a loss, but only because I did not understand how to cover the costs of packaging within the price. And now that my first year is coming to an end, I am at a point where I need to adjust the prices accordingly in order to make ends meet. This is not a drastic price hike, just a few euro's to help cover production and packaging costs.
With that in mind, the new prices are as follows:
Kaapstad - was €10, now €12. Gerhardt - was €17, now €19.
Jaws - was €27, now €31 Ripple - was €10, now €13.
I have not given much attention to the subscription boxes available, and that needs to change.
At present I have just the one subscription box. This is a 6 month subscription to receive 25 assorted chocolate bonbons ever month. I try to differentiate this box from the standard box of 25, in that it will include more variety of flavours and more of the bonbons that I am trialing (and, therefore, those that are not yet on sale in the other boxes). The Subscription Box costs €30 per month, not including shipping.
Sweet Tooth, Wavelet
By the end of May I am planning to release two more subscription packages. First is Sweet Tooth, which includes a box of 9, a mixed box of 20-25 cookies, and a chocolate bar. I am still working on the price, but subscription duration is likely to be 9 months.
Up next is Wavelet, a limited run box of 9 Ripples. For those of you new to this community, Ripples are b-grade bonbons; there is little to nothing wrong with them in terms of flavour or shelf-life, but they do have defects that prevent me from selling them in the standard boxes. Not wanting them to go to waste due to a small hole or crack in the shell, or in the case of this photo, a thicker couverture, I am selling them for a cheaper price. Ergo, Wavelet is a limited run 9 week subscription box of 9 Ripples, for just €9 per week.
One final thing before this post gets any longer: a lot of you have been asking if I would consider offering workshops, where you can come in and do some painting, learn about chocolate tempering, and maybe even create your own box. This is something I have been looking into and look forward to doing, but I am not yet ready for. BUT... I would like to try starting something around September, if Covid regulations allow.
That being said, I still work out of the same kitchen. Shops are open, and although I do not have an actual shopfront, you are more than welcome to come by for some bonbons. Just let me know in advance in case of stock levels, or conflicting schedules with the wife...
